Why twin-seat version?

Thanks to plane_man contribute this video. I don’t care the rafale or tyfone, I just wondering why only twin-seat S.H. do demonstration on air show not single seat? Generally I think, single-seat version should be more outstanding than twin-seat version on maneuvering performence. Who are SH pilots here?:confused:
