I was going to mention exposure but Peter beat me to it!

I think under-exposing by -2/3 EV or a whole stop is a little severe for the majority of circumstances, although I see from your EXIF data you were actually over-exposing by 1/3EV. What metering mode were you using? My 350D (and my 30D for that matter) never goes out of evaluate for shooting aviation and I very rarely use exposure compensation, even shooting JPEG. Try frst re-setting your exposure compensation to zero and see how you get on. I also see you’re using Av at f6.3. You might find f8 a little more beneficial for keeping the depth of field nice and wide.

Nice photos, but I see that quite a few of them are overexposed. I think you would be wise to underexpose by 2/3rd or by a full stop. This will prevent the many shades of white/grey to become one big block of white.
