Smoke?

this might seem like a bit of an amateur subject, but when aircraft are at high flight levels what is the smoke (or whatever it is) coming out of the engines.

If you can tell me it would make my day.

I think it is the hot air from the engine reacting with the the Very cold temperature above 30,000 ft.
