Just out of casual interest, what sort of fixings and bolts etc were used in post-war (50s-60s etc) British instrument panels and fixings etc, brass or steel, and for what reason?

Correct! However in other areas steel is more suitable due to its strength.
I still have some brass 2BA countersunk screws and fibre insert stiff nuts that came from the Fairey Aviation stores.

I always thought brass attachment screws were used as brass is non-magnetic and thus won’t affect instruments.

Most screws and nuts were steel cadmium plated and clear passivated. Later, cadmium plating was deemed a poisonous heavy metal and was being phased out.

Generally “British Association” threads were used on instrument panels then, often 4BA usually round head, sometimes 2BA, and sometimes countersunk, usually steel except close to magnetic compasses where brass was used.
Other components used BSW and BSF threads.
Later on unified threads (UNC & UNF) were used, even aluminium screws (horrible things!)
Phantoms and Hercules were delivered with ANF and ANC threads except for the UK supplied parts.
