Thought the 5fps would be great as I used to burst a lot of the time, but having used it once or twice, I’m actually using ‘one shot’ as the shutter release seems much more responsive.

I very rarely use 5fps (the last time I did in fact was shooting some mad people jumping off a cliff in Cyprus). I almost always keep my 30D at 3fps but I didn’t get it for speed. I simply went for the 30D as I thought it would stand up to the amount of travelling I do much better than the 350D (which I think it has so far). I do like having one lens almost permanantly on the 30D and another one on the 350D, though. Not changing lenses is great for lazy photographers like me!
