All 3 types are fitted with a one class config. The seat pitch on the last A321 I was on wasnt to bad but could have been better.
A320-179 seats
Not to sure about the 737-500 and the A321 but I imagine they are both seated to capacity.
Last flight I had with them on a 500 was very very tight. I couldnt even get the tray table down and I was quite tall then but even taller now.
