Chef Heslop's How to Make Šaltibarščiai

Hi all! Today I attempeted to make some šaltibarščiai and this is how I did it.

Ingredients:
Natural Yoghurt
Spring Onion
Beets (ready cooked)
Cucumber
Salt
Sugar
Egg

1. Hardboil the egg. Leave it to cool when its done.

2. Add natural yoghurt to a pan or bowl. (I used a pan)

3. The chop the spring onion

then the cucumber

then add them both to the natural yoghurt and stir.

4. Cut open your pack of beets and put the juice seperate into a bowl.

5. Then cut up the beets (make sure you put them into strips)

6. Add to the mixture and stir in and it will eventually start to go pink.

7. Not pink enough yet, so add in the beet juice, some sugar and salt and stir.

8. Peel the hardboiled egg open and slice in half, cutting up one half to add to the mixture then stir in then leaving the other half to put on top of the completed dish and top with ground pepper (I used some ground coriander too)

It’s a bit different to russian borscht

I know, I’ve had that a good few times (in Russia) and quite like it! 😀

It’s a bit different to russian borscht – that’s a bit more sour becuase they use all the beet juice.

This dish is Lithuanian.

I have to admit, that looks like one of those dishes I avoid like the plague when I’m in Russia but hey… We’re all different! 🙂

That’s EXACTLY what my daughter said before she started.She’s having a great time and so will you .

Did you eat that for BREAKFAST ?? Nevermind,when you’re a student like my daughter you’ll be getting up at 3pm and then partying till dawn on alcohol and crisps .
