My Uncle did a similar trip with Spotty M a few years ago. It didn’t have the Gibraltar bit in it, just a trip “round the bay” in a 757. He really enjoyed it.
I am very surprised that they include a trip round the hangar. Normally any visit to an airline goes to the simulators, the cabin crew training centre, the catering centre, the operation centre, the M.T. bay, the cleaners rest room and in fact ANY place that does not involve the engineering side of the operation!

Looks like it is just a limit on numbers, guess air traffic control would not appreciate 150+ people trapsing round, crew mini bus etc.
Although I won’t be going, it looks like a good deal! I have a flight with Monarch, flying on my own, I find it pays to arrive as late as possible as you sometimes get a free upgrade to extra legroom seats!
