Potato?

Apparently it is potato week – whether that was over the last week or actually next week and today was the start I haven’t established.
Anyway.
What is your favourite potato, and what is your favourite potato dish?
I like a nice baked Shetland Black with salt, pepper, butter, and grated cheese, or some boiled Jersey Royals with a knob of butter. Lightly sauted or sliced with pasta and a pasta sauce is nice, too.
Still trying to find the perfect potato for the home-fried chip, though. Feel like a big, fat chip sandwich right now as well!
