RCS of eurocanards

The discussions about engine blades in the pak fa thread made me think, what is the situation for the eurocanards?

Gripen has the air intakes on the side and the single engine is centrally placed — thus I would think the engine blades is hidden quite well!?

How does Rafale and Typhoon hide their engine blades?

Another issue often mentioned are the canards and the vertical tail (and for Rafale of course the refuelling probe).

Some people claim that the refuelling probe of Rafale has received some RAM treatment.

I was wondering (and being a non-expert I may be completely wrong) would it not be better to simply make the canards, the vertical tail and the Rafale refueling probe in radar-transparant composites instead? Presumably there would still be some radar return unless they are completely radar transparent, but in any case we are not talking “VLO” here, just a strongly reduced RCS.
