Which would be the better buy for airshow photography – a secondhand EOS 1D Mark 2 or a new 550D? They seem to be going for roughly comparable prices at the moment. Does the fact that the 550D has twice as many pixels mean the picture quality is twice as good

Today pixels have nothing to do with quality anymore. An 8 MP camera with large sensors and can deliver superior pics than a 19 mp with small pixels on a small sensor.
Shouldn’t go for a 1Dmk2, but for a 1Dmk2N. Just sold mine, and replaced it with a 1Dmk4. I binned my 18 mp 7D, which was a noisebox and was unable to get sharp action shots. Had to reduce the image to 50%, and with added unsharp mask, the results were inferior than with the ‘old’ 1Dmk2N
A 1D has much superior AF than anything else Canon has to offer. But don’t go for a worn out prof example.
