Hi,
To my knowledge. There is no such thing as a mid wing flap unless someone will prove me wrong , (I bet someone will).
This was most likely the speedbrakes or spoilers being deployed during flight to slow the aircraft down in the descent prior to landing.
Almost all commercial aircraft use speedbrakes as an effective method of disturbing the airflow above the wing thus creating more drag, this can sometimes cause ‘buffet’.
Spoilerons are the speedbrakes but with only some of the slats being used. These come out when the aircraft is making steep turns or when a sharp amount of bank is used. They act the same way as ailerons, causing the aircraft to roll.
You most likely saw the autopilot in action correcting it’s course due to the turbulence steering the aircraft of course. Hence the autopilot correcting it.
What stage of flight was you in?
Would it be plausible to say that Boeing’s equivalents, the 777 and 747 would handle strong turbulence better with the added wingpspan?

Last year I took some snaps at the stand at Menorca, they had some DC10s there ready for scrap by the look of it, the windows were all taped up n stuff.
I will try and scan them and post them later. Not sure if they are still there.

Think the airline was Euralair, or Lauralair something like that. They operate a fleet of 737-800s.
