You could try something with Ryanair to Dublin – they tend to be fairly good value for a day and I think DUB has a few mounds for spotting.
At Gatwick it depends which end of the runway. If they’re using 26L (terminal end) it’s just a short walk from the terminal, and you can get shots at the end of the runway with no troubles.
If they’re using 8R it’s a long walk (though there may be buses) down that end, or to the crash gate roughly half way down.
