I also like the ITVV programs which are exceptionally well made, but once you’ve seen one cockpit presentation you’ve seen them all. This is where the World Air Routes series is better – providing you with mostly just the exciting parts of flight (takeoff, approach, landing etc.) as well as cabin presentations etc.
I would say that Jan Mogren is the best cameraman because he captures the flight deck action very well and uses loads of artistic angles – as shown below. 😀

I’ve got about 30 of these programs so obviously I like them..
They vary in quality by alot. Most of them are very good – I would say the best out of what I have are the two Swiss programs (A340 and MD11), the BWIA program (A340) and the Air Bourbon program (A340) – well these are at least the most detailed programs where more things are well explained by the crew in terms of the aircraft and the operation.
The AeBal 717 (excellent camera work with interesting angles around the cockpit) and the Aviacsa 737-200 & 727-200 DVDs (classic aircraft with a nice selection of external shots as well as flight deck and cabin) are also very good. These programs still have cockpit presentations, company presentations, walkaround explainations, and shots from the cabin but in a less detailed manner because there are more take offs, approaches and landings.
There are also some dodgy ones to avoid though… The Binter ATR72 program is a bit of a joke because 98% of the program is just the camera being pointed out of the window at the ground for 3 hours. Really nothing to do with aviation. I’m surprised this one was even released, because when there is a cockpit presentation you can’t hear what the pilot is saying because the microphone didn’t work so all you hear is the engine noise.
Generally my only complaint is that nearly all the programs have too much out the window scenery. Some scenery is nice, but many programs have more scenery than anything else aviation related, which seems stupid for a series specialised for aviation enthusiasts and not the general public.
