The best location is at the tip of the radome since it will give data without any disturbance. But, due to few factors which I read few years back and already forgot (anyone can explain?), they want to put at another part of the aircraft.
It’s called pitot tube my friend. All aircrafts have it. If not at the tip of the radome, you’ll find at other part of the aircraft.

Fighter speed is an issue. Read about MIG-31. if it is not an issue they may well use B-737 for launching AAMs. I am sure big AESA radar of AWACS will help to get favourable position. Mach 0.8 is not bad.
Faster fighter will get to the intended fighter zone earlier and this is critical for an interceptor.
