Actually I’v asked this question few pages ago when our muslim friend joined the discussion but didnt got an answer. Really, lets go back to the days of the end of Britain mandate. Britain dividing Palestine to jewish and arabic parts.

Why, instead of building state of arabs they attacking Israel? They did have time – almost 20 years – look at the maps from 1948 till 1967. They dont say lets configure borders – they say jews dont have right to live here. Do you know when Arafat organized PLO? 1964! Before all “occupations” it claimed their main goal – to destroy Israel. Just look at the emblem of PLO – its from 1964 – do you see Israel there?

Thats is answer why Israel need to stay state of jews – its has no choice.
As for religions matter, you just have lucky (or not ;-)) that your state was atheistic for 40 years. At the East reality is very different. Say to iranians now to divide politic and religion – you will see what they will answer you. Even in Israel (so called democratic state) influence of religious (~10% of population) so great that many people call it fundamendalistic state and they not far from true.
